How much can I expect to pay for a half share of beef?

Our beef average around 1000 lbs live weight. A half share is around 290 lbs hanging weight (500 lbs live weight) and runs about $1523 to us, ElkFlat Farm.

You then pay the processor for Cut & Wrap; around $596 - (butcher prices may vary and it depends on what you have done with your meat - they walk you through that and it's easy!)

Total for a half would be around $2119, and varies with the animal, of course. This works out to around $11.15/lb for steaks to burger. A great price for grass fed beef!

Processing

We use either Sunrise Meats or Farmer George Meats to custom cut your beef. They come to our farm to humanely harvest our beef and hang them in their locker for about 2 weeks.

Once we've notified you that your animal has been harvested and is being aged, you will need to call the butcher to let them know what cuts you'd like. They will walk you through what custom cut choices are available. It's very easy and they are wonderful.

You are responsible for processing fees, paid to the custom butcher when you pick up your meat. Processing fees are estimated at $165 per animal plus $.65 / lb. hanging weight, though prices may vary.

They will call you when the aging/cutting/wrapping/freezing is finished. You need to arrange to pick up your meat and pay them the processing costs at that time.

Butchering

We use local custom beef processors who comes out to the farm to humanely, and with the least amount of stress, harvest our animals.

When the beef has been taken to the locker, we email you an invoice for the balance due. It takes approximately 2 weeks to age, cut, wrap and flash-freeze the beef.

During that period, you will need to pay your balance due to us and contact processor to give them your cutting order preferences. They will expect to be paid when you pick up your beef.

What is Hanging Weight?

Our live steers weigh between 1000 and 1200 pounds each "on the hoof." Of that weight, approximately 40-45% is lost at slaughter.

Using a hypothetical 1,000 pound animal, 2 sides (or halves) of beef together would yield about 580 pounds "hanging weight", which is the weight before aging, cutting and wrapping.
